So how–and when–did this ancient grain become such a serious health threat? Author and preventive cardiologist William Davis, MD, says it’s when big agriculture stepped in decades ago to develop a higher-yielding crop. Today’s “wheat,” he says, isn’t even wheat, thanks to some of the most intense crossbreeding efforts ever seen. “The wheat products sold to you today are nothing like the wheat products of our grandmother’s age, very different from the wheat of the early 20th Century, and completely transformed from the wheat of the Bible and earlier,” he says.

Once more than four feet tall, modern wheat–the type grown in 99 percent of wheat fields around the world–is now a stocky two-foot-tall plant with an unusually large seed head. “In 2004, a coalition of Japanese consumer and food industry groups delivered a petition to the Governments of Canada and the U.S. urging them not to introduce GM wheat. Today, consumer rejection of GM wheat in Japan is just as strong as ever. 80 organizations in Japan have already signed the rejection statement,” said Keisuke Amagasa of the Tokyo-based No! GMO Campaign. “A large majority of consumers here in Japan are voicing their strong opposition to the cultivation of GM wheat. We see strong opposition from all sectors of society.”
Japan’s flour companies are also rejecting GM wheat, echoing consumer opposition. In a statement released today, the Flour Miller’s Association of Japan wrote to the No! GMO Campaign indicating its opposition.
“Under the present circumstances, with all the doubts about safety and the environment that the consumers in Japan have, including the effect on the human body from GM foods, GM wheat is included among the items that are not acceptable for the Japanese market,” Kadota Masaaki, senior managing director of the Flour Miller’s Association wrote to the No! GMO Campaign.
Clearfield Wheat, grown on nearly 1 million acres in the Pacific Northwest and sold by BASF Corporation–the world’s largest chemical manufacturer–was created in a geneticist’s lab by exposing wheat seeds and embryos to the mutation-inducing industrial toxin sodium azide, a substance poisonous to humans and known for exploding when mishandled, says Dr. Davis. This hybridized wheat doesn’t survive in the wild, and most farmers rely on toxic chemical fertilizers and pesticides to keep the crops alive.
So what does all of this plant science have to do with what’s ailing us? Intense crossbreeding created significant changes in the amino acids in wheat’s glutenproteins, a potential cause for the 400 percent increase in celiac disease over the past 40 years. Most people believe that there is only one system of medicine available. In point of fact there are many medical systems. In the Western World most of us are familiar with Allopathic Medicine. Gluten Intolerance
Gluten is a protein that is found in grains such as wheat, barley, rye and oats. It is the substance in grain that makes dough stick together and become pliable. Grains became a staple in our diets since the days of ancient Egypt. Grains could be stored and then sold during times of famine. In the time of Hippocrates in antiquity it was known that some people became sick from eating gluten. Those person would eat millet, buckwheat, quinoa and other herbs as an alternative to wheat. In modern times grains and in particular wheat have been bread to be more hearty and disease and pest resistant. This has created many more problems for people because our stomachs have difficulty breaking down the gluten and other proteins. Essential Fatty Acids
Most people believe that the nucleus of a cell is the most important structure in the cell. But actually the most critical structure of a cell is the cell membrane. It is at the membrane that nutrients come into a cell and toxins go out. When the cell membrane is not properly maintained the cell will malfunction. Cholesterol
Contrary to popular myth Cholesterol is necessary for life. Cholesterol is an essential nutrient and made by the body. It makes up a significant portion of the cell wall of each cell. 95% of the steroidal hormones in the body are made from Cholesterol such as Testosterone, Estrogen, Adrenal gland hormones and more. In other words, Cholesterol is an essential nutrient which we must have. A recent U.S. Government advisement stated that there may be a number of problems with statin drugs used in the reduction of Cholesterol from the blood. The evidence is quite clear. However, doctors continue to prescribe statin drugs with no concern about the outcome.* Myelin, the fatty insulation of nerves in the brain and some of the nerve fibers are made of almost 100% Cholesterol. 75% of the brain's weight is made of Cholesterol.
There is great disagreement about how Cholesterol a person should have. You can imagine the impact that a low Cholesterol diet or Cholesterol lowering drugs can have on a system that is primarily made from Cholesterol. Further, Cholesterol is made by the body to patch damage to arteries. There are two causes of low Cholesterol: when there is a mineral deficiency in the body due to a problem with absorption and when a Cholesterol lowering drug has been prescribed. Otherwise, the body regulates the production of Cholesterol automatically based on its needs. In some cases it may be necessary to supplement with Cholesterol in order to promote healing.
Dr. Joel Wallach advocates Cholesterol ranges from 270 to over 300 while many other doctors insist on lowering Cholesterol to below 150. Dr. Wallach points out the fact that Cholesterol itself has never cause any disease. Yet Cholesterol lowering drugs remain a huge money maker for the drug industry.
Some of the signs of possible Essential Fatty Acid or Cholesterol deficiency are: dry skin, cracked heals, cracked cuticles, forgetfulness, eczema, hang nails, splits in the skin, etc.
Not all fats are bad. Fat in and of itself does not make people fat. People are fat because they have mineral deficiencies and consume too many calories. However, cooking oils are especially problematic because of their tendency to oxidize in the presence of heat and light. A very interesting question to ponder is how do manufactures like Mazola prevent oils in bottles from going rancid when they sit in light on shelves for months or even years? They are not refrigerated. It is impossible for vegetables to sit on shelves without rotting. How is it that vegetable oil can sit without rotting?
The answer is easy. They are chemically treated to maintain that gold yellow appearance and to remove the smell of rot. But the point is, the oils are still rancid. When we eat or drink them we are ingesting toxic, damaging substances corrupting our very own cell membranes which as we have already said is the critical mechanism of cell health.
When cooking butter should be used rather than oil and margarine which become "transfats". Transfats are a man made substance which the body has no idea how to handle. It is not found naturally in nature. In a recent study vegetarians were found to have more clogged arteries than meat eater because they were using vegetable oils.
Foods should never be fried. Meat and fats should never be burned. Eggs should be soft boiled, soft scrambled or poached. Meats should be baked, braised or broiled. According to a 1998 study by the University of South Carolina, thousands of women took part in the massive study over a long period of time. Those who ate their meat "well done" were 462% more likely to get breast cancer than those who ate their meat "medium rare".

The Rats proved it
In 1935 Clive McKay, a professor from Cornell University came out with his famous rat study. What Dr. McKay demonstrated was that caloric restriction increased longevity.
